ARCOS innovates with its revolutionary "silk edge", exclusive to this series.
The special "silk" edge has been created by uniting our tradition with the most innovative technology, thus achieving a unique cut. This new "silk" edge brings together the knowledge of our master cutlers with new technologies, achieving great performance, a long-lasting edge and a cut that leaves no one indifferent.
The Manhattan series features an ergonomic handle that fits the hand perfectly, made from technical Polyoxymethylene (POM) plastic with high resistance to detergents and very high temperatures.
Its POM scales increase its resistance to chemicals and to the most extreme temperatures.
It has tongue-and-groove stainless steel rivets that mean corrosion is not a problem for your knives.
The design of this new series is striking for its cutting-edge style and character.
Manhattan completes the wide range of high-quality forged knives that ARCOS has already introduced to the market, such as the Natura and Riviera series, among others. The Manhattan series has a whole array of models (10 in total) that cover the most demanding needs of professional use, from a 100 mm paring knife, through the 130 mm vegetable knife; three sizes of cook's knife (150, 210 and 250 mm); the 160 mm boning knife; the 200 mm bread knife; the 170 mm sole knife; and closing the series, its two most notable knives: the 250 mm ham knife and the new 190 mm "Rocking Santoku". In short, a knife born with the vocation to revolutionise the world of cutting.

Small, light and multipurpose with a slim blade and a central point. It is used to cut, peel and clean fruit and vegetables.
This is a knife forged in a single piece, with no welding of any kind. It stands out for its half-bolster, much sought after by professionals for ease of cutting and sharpening. Its forged NITRUM® stainless steel gives great wear resistance and greater cutting power. This new series benefits from a choil or spine on the blade, with a rounded polish, which sets it apart for the smoothness of the knife's grip.
All the knives in the Manhattan series carry the prestigious North American NSF® (National Standard Food) certification.
