The charcoal or wood one gives the traditional smoky flavour, but takes longer to be ready. The gas one with lava rock reaches temperature in a few minutes, holds a constant heat and is the usual choice in catering for its continuous service; the lava rock spreads the heat and catches the juices, adding a chargrilled aroma.
What is the advantage of a height-adjustable barbecue?
