Commercial ovens and microwaves for hospitality
In this category you will find commercial microwaves from 20 to 34 litres, electric pizza ovens with cordierite stone, charcoal ovens for 40 to 140 covers and combi ovens (convection + steam) from Sammic, Lacor, Pujadas and FM Hornos industriales. This is equipment built for the pace of bars, restaurants, pizzerias and contract catering, with domestic versions from Lacor for anyone after the same thing on a smaller scale.
Commercial and industrial microwaves
A catering microwave is built to run in continuous service, with stainless steel cavities and power ratings far above domestic models. The MO-1000 commercial microwave by Sammic offers 25 litres and 1,550 W of power consumption in a body of 51 x 43 x 31 cm, and its bigger sibling, the MO-1834 with 34 litres and 2,800 W, is designed for bar counters and kitchens with heavy service peaks; both are CE and Aenor certified. From Lacor, the 69325 commercial microwave combines 25 litres, 1,000 W and an 18/10 stainless steel cavity with a 3-year guarantee. For domestic use or small businesses, the Luno large-capacity microwave (20 litres, 700 W, Ø24.5 cm turntable and analogue control panel) and the 69322 microwave with turntable (20 litres, 700 W, 18/10 stainless steel interior) take care of everyday reheating and defrosting.
Electric pizza ovens
Sammic's PO series is manufactured in Guipúzcoa from stainless steel and ranges from the twin-chamber PO-1+1/32 —two pizzas of Ø32 cm, 3,200 W and adjustable temperature from 50 to 320 °C— to three-phase models such as the PO-9 for 9 pizzas of Ø35 cm, with 13,200 W and up to 500 °C. All of them mount a refractory cordierite stone baking deck —a mineral that withstands up to 1,000 °C—, top and bottom heating elements with independent thermostats in each chamber, and a glazed door with interior lighting. The Lecco pizza oven by Lacor follows the same philosophy with a 100% natural cordierite stone of 40 x 40 cm, independent thermostats top and bottom, a range of 0 to 300 °C and two versions: single level with 2,000 W (reference 69632) or two levels with 3,000 W (reference 69633); it sits directly on a table or worktop.
Charcoal ovens
The Oven charcoal ovens by Pujadas work with charcoal and reach 350 °C, with an air intake and smoke outlet adjustable across several positions and a double firebreak in the flue. They are built from stainless steel and vitrified iron, with an insulating lining that optimises charcoal consumption, a deep hopper with individually replaceable bars and a stainless steel ash drawer. The Oven50 for 40-50 covers takes a 5 kg charcoal load (62 x 70 x 55.5 cm, 130 kg); the Oven90 for 80-90 covers takes 7 kg, and the Oven140 for 130-140 covers holds 9 kg of charcoal. As fuel, Pujadas offers pallets of 28 sacks of 10 kg of marabu charcoal, ideal for its high calorific value and long burn time.
Combi and convection ovens
The STR 106 M combi oven (convection + steam) by FM takes 6 GN 1/1 trays with 68 mm spacing, adjusts humidity from 0 to 100%, reaches 250 °C and mounts 9,200 W with a three-phase connection; the STR range also includes the 110 M and 106 V1 models. For more modest output, the multifunction convection oven by Pujadas works with 4 trays of 43 x 32 cm, 2.67 kW on a single-phase 230 V connection and temperatures of up to 300 °C with a safety thermostat. For the domestic countertop, Lacor offers its 28 and 35-litre electric convection ovens —5 functions, 0 to 120-minute timer, up to 230 °C, PFOA-free non-stick interior and rotisserie spit included— and the halogen convection oven of 12 litres with a range of 125 to 250 °C.
How to choose your oven or microwave
Think first about service volume: for reheating and regenerating, a 20-25-litre microwave covers a bar counter and the 34-litre model a kitchen with heavy peaks; for a pizzeria, count how many pizzas you need to bake at once and their diameter; for charcoal roasting, choose the Oven by number of covers; and for full menus, the combi oven with GN 1/1 trays is the most versatile. Always check the electrical connection available: the larger units are three-phase. Complete your equipment with oven trays, roasters and oven dishes, bain-maries and toasters, or browse the full catalogue from Sammic, Lacor, Pujadas and FM Hornos industriales.
Frequently asked questions about hospitality ovens and microwaves
What is the difference between a commercial microwave and a domestic one?
Build quality and pace of work. A commercial microwave such as Sammic's MO-1834 offers 34 litres and 2,800 W to reheat food in seconds throughout service, with a stainless steel cavity designed for intensive use. A domestic one, such as Lacor's Luno, runs on 700 W with 20 litres: enough for home or a small business, but not for a bar counter with queues.
Which pizza oven do I need for my business?
It depends on how many pizzas you bake at once and their diameter. Sammic's PO-1+1/32 handles 2 pizzas of Ø32 cm on a single-phase connection; the larger models in the series, such as the PO-9, bake 9 pizzas of Ø35 cm at once on a three-phase connection at up to 500 °C. All of them use refractory cordierite stone, which delivers that signature crisp, golden base.
How many covers does a charcoal oven serve?
Pujadas' Oven charcoal ovens are chosen by service capacity: the Oven50 covers 40-50 diners with a 5 kg charcoal load, the Oven90 reaches 80-90 diners with 7 kg and the Oven140 serves 130-140 diners with 9 kg. Their insulating lining and deep hopper make the charcoal last longer than in other ovens.
What is a combi oven (convection + steam)?
An oven that combines hot air and steam in the same chamber, with humidity adjustable from 0 to 100%, such as FM's STR 106 M. It lets you roast, bake, regenerate and steam on GN 1/1 trays while controlling the texture of the food: more steam so it does not dry out, more convection for browning.
Do I need a three-phase connection for these ovens?
Only for the most powerful units. The Pujadas convection oven (2.67 kW) and the PO-1+1/32 pizza oven (3,200 W) run on a single-phase 220-240 V connection; by contrast, FM's STR 106 M combi oven (9,200 W) and Sammic's large pizza ovens, such as the PO-9 (13,200 W), require a three-phase connection. Check this before deciding on a model.
