Stainless steel plating and pastry rings
Kitchen rings are ideal both for plating up and for pastry work: they build the plate in layers (tartares, salads, timbales, rice dishes) and shape cakes, mousses and semifreddos with clean edges. Round plating rings
They are the most widely used format in the kitchen. The round Ibili rings, 4.5 cm high, run from Ø4 to Ø24 cm (references 716004 to 716024), so they cover everything from an individual portion to a large presentation. If you are after more height for building layers, the round Ibili rings, 6 cm high, are made from Ø6 to Ø12 cm. From Lacor, the highlights are the 4.5 cm high Mousse rings and the 3.5 cm high Entremet rings, both designed for pastry work and cold plating, along with the 4 cm high round ring in 18/10 stainless steel.
Square and rectangular rings
For more architectural presentations, the Ibili set of 3 square rings includes the 6, 8 and 10 cm sizes, and its individual square mould runs from 4x4 to 10x10 cm with a height of 4.5 cm. The Lacor square ring mould, in 18/10 stainless steel, goes up to 20x20 cm (references 68460 to 68240, 4 cm high). Adjustable rings: one mould, many sizes
The Ibili adjustable round mould adjusts by means of a fork from Ø16 to Ø30 cm, with a height of 6 cm, and lets you cook directly on the oven tray or plate up on any flat surface. Its rectangular version opens out from 20x24 to 38x46 cm. They are the most versatile option if you would rather not fill the drawer with fixed sizes.
Pastry rings for baking
The Lacor Vacherin pastry ring, in 18/10 stainless steel, is the classic for shortcrust, puff and choux pastry: it delivers regular, well-defined edges and a perfect release of the base. It is made in 13 diameters, from Ø7 to Ø28 cm, all 6 cm high (references 68607 to 68628).
Accessories: presser, acetate and PVC cake collar
The Ibili ring presser (Ø7 cm, compatible with most rings) compacts the ingredients inside the ring so the shape does not collapse when you lift it off. There is also the Ibili set of 3 round rings with the presser included, in Ø7, 8 and 10 cm, stackable and dishwasher-safe. How to choose your plating ring
For individual portions, the Ø7 to Ø10 cm range is the most practical; heights of 4 to 6 cm let you build two or three layers.
