Which kitchen scissors should I choose for everyday use?
The best for everyday use are scissors forged in a single piece with detachable blades so you can clean them thoroughly and a handle with a non-slip surface. Stainless steel of grade 4034 or higher stands up well to the dishwasher; fine serrated blades stop food from slipping.
Are mandolines safe?
Professional mandolines with a hand guard (push-guard) and adjustable blades are safe as long as you use the guard. The most common injuries happen when "scraping the last piece" without the hand guard: never do this. We recommend models with a non-slip base and interchangeable blades (julienne, slice, crinkle).
What wire is used in cheese cutters?
Wire cutters use a very fine stainless steel wire that cuts cleanly without dragging through the paste of the cheese. The wire is a consumable spare: when it slackens or breaks you replace it, and it doesn't need sharpening. For very hard cheeses a cutter with a rigid blade on a board is better than a wire one.
How do you sharpen a pizza cutter?
The rolling-wheel pizza cutter is sharpened by running the wheel over a fine stone or a dedicated sharpener (not an electric knife sharpener). In many cases the most practical option is to replace the wheel: it's cheap and the cut comes out perfect. Always clean it after each use to prevent oil and cheese from building up.
Are dough scrapers dishwasher safe?
Rigid stainless steel scrapers do withstand a commercial dishwasher; flexible food-grade plastic ones do too, but at a moderate temperature (60 °C) so they don't warp. Scrapers with a wooden handle should always be washed by hand.
