Vacuum bags and rolls are the essential consumable for your vacuum sealer: they keep food fresh for longer, prevent freezer burn and allow low-temperature cooking. Embossed or smooth bags?
The difference lies in the texture. Embossed bags have one side with a mesh-textured relief that creates channels through which a domestic external-suction vacuum sealer can extract all the air; they are the ones required by machines from Lacor, Garhe, Elma, Foodsaver, Jata or Laica. Smooth bags, on the other hand, are designed for professional chamber vacuum sealers, which create the vacuum throughout the whole chamber and do not need the embossing.
Storage bags and rolls
For everyday use, the 10-metre-long Lacor vacuum rolls can be cut to the exact size of each piece: available in widths of 14, 22, 28 and 40 cm, with a thickness of 105 microns. If you prefer a ready-to-use format, the Lacor vacuum sealer bags share those same 105 microns — one of the highest thicknesses on the market for storage — and are sold in packs of 25 units (16x20, 20x30, 24x36 and 28x40 cm) or 100 units (20x30, 25x35, 30x40 and 40x60 cm).
The pack of 100 embossed Garhe bags measuring 25x35 cm is made from 95-micron multilayer polyethylene and polyamide film and features easy opening without scissors; it suits all domestic vacuum sealers. And the pack of 2 embossed Elma rolls (20 cm x 3 metres each) adds the Elmalit multilayer system with an anti-UV filter, which protects food from light and guarantees an airtight seal.
Sous vide cooking and pasteurisation bags
To cook inside the bag you need purpose-made material. The Elma embossed cooking bags (50 units of 15x30 cm) withstand prolonged processes in the oven, microwave and hot water: up to 1 hour at 110 °C or up to 8 hours at 100 °C. The Lacor Tech professional bags raise the thickness to 150 microns in 100% food-grade polyamide and polyethylene: they can seal liquids, are suitable for freezing, the microwave and low-temperature cooking, and are reusable and dishwasher safe; the assortment includes 12 bags of 20x30, 8 of 25x35 and 5 of 30x40 cm.
In the hospitality trade, the 100%Chef vac-andcook smooth bags (500 units of 20x30 cm) are produced for low-temperature cooking and pasteurisation in chamber vacuum sealers, and bear the printed COOKING 120ºC/248°F seal to distinguish them from storage bags. This is an important detail: a storage bag degrades with heat and must not be used for cooking.
How to choose your vacuum bags
First, look at your machine: domestic external suction = embossed bag or roll; professional chamber sealer = smooth bag. Second, the use: for storing in the fridge or freezer a storage bag is enough; for sous vide cooking or pasteurising, always choose cooking bags with a certified temperature. Third, the size: a roll gives you complete freedom of length, and with bags it is best to leave plenty of room between the food and the sealing area so the seal comes out perfect.

What is the difference between embossed and smooth bags?
Embossed bags have a textured side that allows domestic external-suction vacuum sealers to extract the air; smooth bags are for professional chamber vacuum sealers, which create the vacuum throughout the whole chamber.
Do they work with any vacuum sealer?
The embossed bags and rolls from Lacor, Elma and Garhe work with most domestic external-suction vacuum sealers (Lacor, Garhe, Elma, Foodsaver, Jata, Laica...). Smooth bags, such as the vac-andcook from 100%Chef, require a chamber vacuum sealer. The 150-micron Tech bags are designed for the Lacor Tech vacuum sealer.
Can vacuum bags be reused?
Storage bags should not be reused with cooked food, although they can be reused with dry products such as pulses, nuts or seeds. The Lacor Tech bags are indeed reusable and dishwasher safe.
What do microns mean and how many do I need?
Microns measure the thickness of the film: the more microns, the greater the puncture resistance and the better the barrier. For domestic storage, 95-105 microns is a high thickness; the professional Tech bags reach 150 microns for sealing liquids and low-temperature cooking.
Can I cook sous vide or freeze in these bags?
Freezing, yes, with any of them. For sous vide cooking use only cooking bags: the Elma ones withstand up to 110 °C for 1 hour (or 100 °C for 8 hours) and the professional vac-andcook bags are certified for cooking and pasteurisation at 120 °C.
