How do you clean a granite or marble mortar?

The classic process: grind a handful of raw rice with a clove of garlic and coarse salt until you get a grey paste (that colour indicates loose stone dust), rinse, and repeat 2-3 times until the rice comes out white. After that it is ready for normal use.
What size of mortar should I buy?
