How to choose your cooking thermometer

To get it right, look at three things: the temperature range (a meat or oven thermometer needs to reach 250 °C, while a fridge one works in the negatives), the type of measurement (by contact with a probe or from a distance with infrared) and the extra functions such as an alarm, a removable probe or wireless reading. If you cook roasts and meat, prioritise a probe with alarm; if you work with griddles, oil or surfaces, infrared will give you the fastest and most hygienic reading.

Frequently asked questions about cooking thermometers

Which cooking thermometer do I need for meat and roasts?

For meat and roasts, the most practical option is a probe thermometer: you insert the probe into the centre of the joint and it measures the internal temperature without opening the oven. Look for ranges up to around 250 °C for the oven and a guide to cooking points (rare, medium, well done). What is the difference between a digital thermometer and an infrared one?

The digital probe thermometer measures the temperature by contact, inside the food or liquid, and is ideal for roasts, syrups and ferments. The infrared thermometer measures the surface temperature from a distance, without touching the food, by aiming its laser pointer: it's very fast and hygienic for griddles, oil or surfaces. For contact use, the Lacor digital thermometer with alarm works well; for measuring from a distance, the infrared thermometer with laser pointer.

What temperature is safe for storing food in the fridge and freezer?

As a general guide, the fridge should be kept at around 1-4 °C and the freezer at about -18 °C. A fridge or freezer thermometer lets you check that the cold chain is being maintained and prevent food from spoiling. For this there are specific models such as the Lacor fridge and freezer thermometer with 2 probes.

Will any thermometer do for baking and for making sugar or caramel?

No. For baking, it's best to use a sugar or caramel thermometer, designed to withstand high temperatures (above 100 °C, up to around 200 °C) and to read the sugar stages accurately (thread, ball, caramel). For doughs, creams or tempered chocolate, digital probe thermometers work well. In this category you'll find the Ibili sugar thermometer.

How do you clean and look after a cooking thermometer?

Clean the probe with a damp cloth and mild soap after each use, without submerging the display or the electronics unless the manufacturer states it is submersible. Dry it well, store it protected and, on digital models, remove the battery if you're not going to use it for a long time. Good maintenance preserves the accuracy of the reading.
