Description
The Evva Red by Ibili is an Italian moka pot / stovetop espresso maker made of cast aluminium with a reinforced 5 mm base suitable for every hob, induction included — something unusual in aluminium moka pots, which normally do not work on induction hobs. Available from 2 to 12 cups (100 to 600 ml), in a deep red that stands out on any worktop. It combines the best of both worlds: the fast extraction and dense espresso of aluminium with the full hob compatibility of steel coffee makers.

Aluminium is not ferromagnetic, so an ordinary aluminium moka pot will not heat up on induction. The Evva range solves this with its special 5 mm base, which induction hobs detect without any adapter. Shop tip: on hobs with large cooking zones, check the minimum detection diameter if you choose the small sizes; from 6 cups upwards this is rarely an issue.
Water in the base up to the valve, medium-ground coffee in the funnel without tamping, and a medium-low heat. The tip we always repeat in the shop: take it off the heat as soon as the coffee starts to bubble up — letting it boil scorches the coffee and is the number one cause of bitter moka pots. Aluminium, a great heat conductor, extracts a dense, aromatic espresso in just a few minutes, and the thick base spreads the temperature evenly with no hot spots.
The "cups" of a moka pot are espresso cups (about 50 ml). For 1-2 people, the small sizes; for the daily coffee of a coffee-loving home, the 6-cup; the 9- or 12-cup for frequent guests, gatherings or small offices. If you are torn between two sizes, choose the smaller one: a moka pot performs best when full.
