The JD4 ham stand is a product conceived, designed and manufactured as the ultimate tool for the professional ham carver.

It adapts to any size of ham or shoulder to be carved, since it allows the angle and position to be fully adjusted, making carving more efficient, simpler and more ergonomic. The ham can be positioned horizontally or vertically thanks to the three-dimensional rotation of its clamping head, and its cutting angle can be adjusted by tilting its arm.
On the Zeus model, the piece can be rotated 360 degrees horizontally for demonstrations, presentations, showing the cut or simply keeping the stand tucked away in places where this is necessary.
The stand's arm is removable, allowing one ham to be quickly and easily swapped for another in a matter of seconds and so speeding up the service of the finished product. On the Zeus model, it also allows the arm to be reinstalled the other way round, in the correct orientation so that the clamping levers can be operated by left-handed users.
As it dismantles completely, thorough cleaning of the stand is made easy in very little time after use.

Materials:
The main material used is 304 stainless steel for all the metal parts and food-grade polyethylene for the cradle at the lower part of the arm. The stainless steel is given a matt finish, having established that for a public presentation it is much cleaner, as no grease marks or visible fingerprints are left by a touch or by holding it with the hand.
For the various bases that can be fitted there are several options: stainless steel, wood, granite, Silestone and any other requested by the end user.
Rotating clamping head:
Made from stainless steel, it consists internally of two sharp spikes at the bottom and a clamping knob at the top, so that, with three-point fixing, movement of the piece during carving is prevented. It has a screw to lock the internal rotation, which allows the ham to be turned over without removing it from the stand. Larger-diameter heads are available for hams without the trotter, along with bespoke heads and clamps.
Ball joint:
This element, exclusive to JD4®, allows the height and distance of the arm to be adjusted, using the distance-locking lever, to fit the stand to the size of the ham or shoulder to be carved.
Arm:
A key element of the stand. Made from stainless steel. It is removable with a slight movement of the braking lever, allowing one ham to be quickly and easily swapped for another in a matter of seconds and so speeding up the service of the finished product. It also allows the arm to be reinstalled the other way round, in the correct orientation so that the clamping levers can be operated by left-handed users.
The rear cradle supporting the arm is made from food-grade polyethylene, a hard-wearing material that does not damage the knife's edge when struck during carving. As it does not pierce the tip or the far end of the ham with a spike, it does not let in air that could affect the organoleptic properties and quality of the meat in that area. This part can be easily turned and swapped using a screw should it wear.
Arm base:
Made from stainless steel, it is composed of two distinct parts; on the one hand, the fixed part where the arm fits. It has a brake, operated by a lever, that locks the arm at whatever angle is desired. Thanks to the internal polymer and an easily accessible screw, the brake level can be set without clamping, so the arm does not fall when the brake is released. As well as braking the arm and allowing its angle to be adjusted quickly, the lever allows the arm to be removed to make quick product changes, immediately fitting another arm prepared in advance.
The lower part, or rotating drum, is fitted with an eccentric steel bearing designed to work at 2,000 rpm, hugely over-engineered to guarantee lifelong operation. This element allows the fixed part holding the arm to rotate 360 degrees, easily locked with a second lever.
Stand base:
As this element is fundamental to the stability of the stand, great emphasis has been placed on the weight, dimensions and anchoring of the upper part. Solidity is a factor that reaches this fundamental part of the stand, so its design and features have been carefully considered from the outset in order to combine materials without losing any of its qualities. Another option is to do without the stand base and anchor the arm base to a counter or carving table. The key is that lower anchoring, which consists of two through steel bolts. The stand's lower platform is supplied, by default, in stainless steel or wood, although it can be made with different finishes, so it can be adapted to suit each business's décor or the user's taste.
Cleaning:
As an important factor to bear in mind, the design and manufacture use components with no crevices and no materials that could rust or hide dirt. Its ease of cleaning guarantees maximum hygiene with regular use of the stand. It dismantles completely and is made from stainless steel with a matt finish. The bases are made from smooth surfaces of food-industry-safe materials.
Maintenance is extremely simple since, being steel, it can be washed with soap and water and can go in the dishwasher. The advantage of matt steel is that grease marks are not visible during use, so at the end of service the appearance of cleanliness is impeccable.
The parts that may wear, such as the head threads, the arm cradle and so on, can be replaced quickly and at very low cost. These are the parts used most often, on a daily basis. In any case, the working life of these elements is enormous, withstanding daily work for years, as they are high-performance parts.
The removable parts are dishwasher safe, making daily cleaning easier and guaranteeing complete hygiene in daily service.
