The Nemox GELATO Chef 5 L Automatic i-Green ice cream maker is a countertop machine, designed for restaurants and small businesses looking to start producing artisan ice cream with a modest investment and no compromise on quality.
In a HORECA environment, for me the key is that the machine is consistent (the same texture batch after batch) and does not tie you to a skilled operator. The electronic control system and the "by density" working logic, very typical of countertop ice cream makers, help a great deal here.
The Gelato Chef 5L Automatic produces 1000 g per cycle of about 20 minutes. It is air-cooled and has a removable power cable.
On distributor spec sheets you will see figures of around 20–25 minutes per cycle and output up to 3 kg/h (4.5 L/h) depending on the configuration/source. What matters when deciding is your sales volume and turnover: if you are going to serve ice cream as a dessert and need quick replenishment, this range is exactly what a restaurant with steady demand usually needs.
It offers two operating options:
MANUAL OPERATION
In manual mode, the user has full control over the machine's functions.
An electronic system monitors the density of the ice cream and stops the paddle when the mix becomes too firm. The compressor keeps running.
The operator can then decide whether to switch the machine off or activate the automatic storage mode.
AUTOMATIC OPERATION
In automatic mode, the machine's functions are managed
entirely by the sophisticated electronic control system. When you switch the machine on, simply press the storage button. This starts the freezing cycle and, once the ice cream reaches the right consistency, the storage phase begins.
The storage cycle, managed by software, activates the paddle and the compressor according to the density of the mix, keeping the ideal consistency for serving.
For me, automatic mode is the one that pays off most in catering: you reduce mistakes, standardise texture and leave the machine "on hold" so the ice cream is ready to serve at peak times. (And manual mode is perfect for fine-tuning or for recipes that behave differently).
Made from stainless steel, the Gelato Chef 5L Automatic i-Green has an automatic storage function that keeps the ice cream at the ideal temperature and consistency for serving. It includes
a removable 18/10 stainless steel bowl. The mixing blade is stainless steel with removable scrapers to ensure hygiene and robustness.
Here are two points that make a difference in a professional kitchen:
Removable stainless steel basket (2.5 L): speeds up cleaning and lets you organise production.
Removable scrapers: help maintain hygiene and performance (correct scraping = better heat exchange).
Useful tips:
When preparing ice creams and sorbets, do not add more than 800 g of mix to allow for proper expansion of volume during mixing.
We recommend pouring the mix in at a temperature between +10 °C and +20 °C. At higher temperatures, the processing time can increase considerably.
Before placing the mix in the basket, we recommend pre-cooling it by pressing only the compressor button, 5 minutes before starting the production cycle.
We recommend leaving the machine to rest for a short period (about 10 minutes) between each preparation.
If I had to sum it up "in the kitchen": don't push it with too much mix, watch the input temperature, and give it a break between batches. Small details that show in the final cream.
The green "heart", highlighted in the design, allows more eco-friendly and efficient operation, saving electricity and respecting the environment.
To guarantee consistently high-quality ice cream, we recommend not storing it in the container for more than 8 hours.
This is important: the holding function is a huge advantage for service, but it should be used as a service "bridge", not as infinite storage.
