Description
A paring knife, or vegetable knife, with a 10 cm blade, normally used for free-hand cuts, turning vegetables, peeling and so on. Along with the chef's knife, one of the most basic knives in any kitchen.
The steel: made from Nitrum steel, a nitrogen-steel formula that ensures a longer-lasting edge (ISO 8442.5), greater cutting power (ISO 8442.5) and greater strength (ISO 8442.1). In addition, the Nitrum steel manufacturing process, unlike other steels, is environmentally friendly.
Tempering, the stage where the steel's molecular structure is modified through controlled temperature changes, is the most important stage in steel manufacturing as it gives the piece its final hardness.
