The 16 cm nakiri is the Japanese knife made for vegetables: its straight, rectangular blade reaches the board with every cut, ideal for slicing, chopping and shredding vegetables quickly and evenly.
It belongs to the Signature series by 32 Dumas, the French cutler founded in 1932 in Thiers (the historic capital of French cutlery), now part of La Brigade de Buyer. The Signature series is the house's top range: 100% forged knives in which blade, bolster and tang are born from a single steel ingot, giving exceptional rigidity, balance and durability.
The blade is made from French 4116N nitrogen-enriched stainless steel, hardened to 58-60 HRC. This hardness, high for a European knife, means an edge that stays sharp for far longer and a precise, clean cut. Sharpening is done by hand, at a combined 25° angle, and it has earned a "very good" rating from the independent CATRA institute, the world reference for measuring cutting power.

To protect the edge and the wooden handles, we recommend washing by hand in warm water and drying immediately. Not dishwasher safe. Always cut on wooden or polyethylene boards, never on hard surfaces (glass, marble or ceramic).
