Gobel is a French manufacturer of pastry moulds and bakeware based in Joué-lès-Tours, next to Tours, in the Loire Valley. The company was founded by Étienne Gobel in 1887 to make copper and tinplate moulds, and since 2011 it has been part of Groupe Louis Tellier alongside the /en/marca/tellier/ brand, also sold at Hiperchef. Its moulds are made entirely in France, in a factory holding the EPV label (Entreprise du Patrimoine Vivant), which the French state awards to companies that preserve outstanding craft and industrial expertise.

At Hiperchef we sell the Gobel range most used in professional bakeries and at home: individual moulds with a two-layer non-stick coating (soufflés, burger buns, fluted tartlets, French madeleines), aluminium canelé moulds with four layers of non-stick, a stainless steel yule log mould, a pâté mould with removable sides, a four-baguette tray and two bakery tools: the croissant cutter and the beech wood tartlet tamper. Every item comes with a 3-year guarantee, except the Bordelais canelé moulds, which are a professional product with 1 year.

Which Gobel moulds you can buy at Hiperchef

Individual moulds with two-layer non-stick

  • Box of 4 individual soufflé moulds: Ø 8 cm and 5 cm high (160-299 ml portion). The metal heats up quickly and evenly, so the soufflé rises uniformly and stays light; the non-stick coating gives even caramelisation around the edges and a clean release. LFGB certified.
  • Box of 4 burger bun moulds: Ø 10 cm and 2 cm high, oven-safe up to 250 °C and freezer-safe. They give buns the round, regular shape of a homemade burger bun.
  • Pack of 6 square fluted tartlet tins: 10 × 10 cm and 2 cm high, in tinplate with a double non-stick layer. Ideal for sweet and savoury tartlets in something other than the usual round shape. This model is not dishwasher-safe.
  • 12-hole French madeleine tin: 39.5 × 20 cm tray with 12 shell-shaped cavities (10-24 ml each) and two layers of professional non-stick. Dishwasher-, oven- and freezer-safe.

Canelés, yule log, pâté and baguettes

  • Pack of 6 fluted «Bordelais» canelé moulds: the classic mould for the canelé de Bordeaux, Ø 55 mm and 50 mm high, in aluminium coated with 4 layers of non-stick (60-99 ml each). This is the format bakeries use to get the dark crust and custardy centre.
  • Round yule log mould: stainless steel, 30 × 8.5 × 6.8 cm and 1.5 litres, for yule logs and Swiss rolls. Dishwasher-safe, oven-safe up to 230 °C and freezer-safe; comes with a recipe.
  • Long pâté mould: 30 × 6 × 5 cm in tinplate with a double-layer non-stick coating. Its four sides and base come apart, so pâtés, terrines and loaf cakes come out without breaking. Withstands up to 250 °C.
  • Non-stick 4-baguette tray: 38 × 30 × 2 cm, steel with a professional coating. The waves support each loaf during proving and baking so it holds its shape.

How to choose a Gobel mould

Start with the format: individual (soufflé, canelé, tartlet, madeleine, burger bun) or whole-piece (yule log, pâté, baguettes). Then the material: tinplate and steel with two-layer non-stick are the usual bakery choice for their heat conduction and easy release; the aluminium of the Bordelais canelé moulds heats up faster, which is exactly what a canelé needs; and the stainless steel of the yule log mould is the toughest and the only one in the range designed for the dishwasher without reservations. Finally, check the maximum temperature on each product page (230-250 °C) and whether the model is freezer- and dishwasher-safe, because not all of them are.

All Gobel moulds at Hiperchef are in the metal moulds category, within baking moulds; the pâté mould and the baguette tray are also under oven, the croissant cutter under pastry cutters and other moulds and the tamper under pastry utensils. If you are looking for flexible platinum silicone moulds for pastry and ice cream, you will find the alternative in our guide to Silikomart Professional.

Caring for Gobel non-stick moulds

Wash them in hot water with a mild detergent, without scourers or abrasive sponges, and dry them thoroughly before putting them away so the tinplate does not mark. Keep tinplate moulds out of the dishwasher (each product page states whether it is dishwasher-safe). Do not cut inside the mould with a knife or use metal utensils on the non-stick coating. To turn out, let it cool for a couple of minutes and invert; with the pâté mould, simply release the sides.

Frequently asked questions about Gobel tins and moulds

Where is Gobel from and where are its moulds made?

Gobel is a French company founded by Étienne Gobel in 1887 in Joué-lès-Tours, next to Tours (Loire Valley). Its moulds are made entirely in France, in a factory holding the EPV label (Entreprise du Patrimoine Vivant). Since 2011 it has been part of Groupe Louis Tellier.

Are Gobel moulds dishwasher-safe?

It depends on the model. The stainless steel yule log mould and the 12-hole French madeleine tin are dishwasher-safe; tinplate moulds, such as the pack of square fluted tartlet tins, are not. At Hiperchef we state this on each product page. In general, washing by hand with a mild detergent and drying thoroughly extends the life of the non-stick coating.

What is the maximum temperature Gobel moulds can withstand?

Tinplate or steel moulds with two-layer non-stick, such as the pâté mould and the burger bun moulds, withstand up to 250 °C; the stainless steel yule log mould, up to 230 °C. The maximum temperature is shown on each mould's product page.

Which Gobel mould is used for canelés de Bordeaux?

The pack of 6 fluted «Bordelais» canelé moulds: aluminium moulds, Ø 55 mm and 50 mm high, with four layers of non-stick. Aluminium heats up quickly and gives the dark, crisp crust typical of a canelé, which is why bakeries use this format.

What guarantee do Gobel products have?

The Gobel moulds and tools we sell at Hiperchef have a 3-year guarantee, except the Bordelais canelé moulds, which are a professional product with a 1-year guarantee. In all cases, the guarantee covers manufacturing defects, not wear of the non-stick coating caused by incorrect use.

What is the difference between Gobel and Louis Tellier?

They are the two brands of Groupe Louis Tellier: Gobel makes pastry moulds and bakeware in Joué-lès-Tours, and Louis Tellier makes professional kitchen utensils (food mills, mandolines, graters, cutters). At Hiperchef we sell both; you will find them on their brand pages.
