In this book you'll find 23 easy, tasty and healthy recipes, whose main ingredients are vegetables and fruit grown with great love in the Valencian huerta by the La Huerta de Ubuntu cooperative, a social enterprise that brings together L?Horta Nord and its farmers with young immigrants who arrive in our country in search of a better life. Its pages also include a description of the age-old irrigation system with its nine acequias (channels), recounting the features and course of each and every one of them.
Special mention also goes to the Tribunal de las Aguas de Valencia (Water Court of Valencia), the judicial body that today governs the law of the huerta and has done so for centuries, and which is unique in the world. Finally, it tells some true stories of the real heroes of the huerta, the farmers who, despite the difficulties they face every day, keep on cultivating and caring for the Valencian huerta. What it proposes is that you relax and cook simply and quickly, without fuss but without giving up on flavour, enjoying yourself while you do it — and while you eat it too.
