Jordi Roca's journey to the origins of cocoa and its rediscovery for creating completely revolutionary new desserts.

Jordi Roca began by working with chocolates of different origins, prepared in very different ways in his creations. Until he decided to go a step further and start a new creative process based on rediscovering cocoa. His experimentation led him on a journey through the history of chocolate, which took him to the birthplace of cocoa in the Amazon rainforest.

After learning about the nature of criollo cocoa and its cultivation, Jordi Roca returned to his workshop and gave his creative work a new twist, launching into new creations based on the cocoas he gathered throughout his travels across the different countries of Latin America. This book starts from the creative process behind one of his best-known creations, the trigger for his journey in search of the roots of cocoa, and ends with the new recipes he will showcase at El Celler de Can Roca, in the Rocambolesc ice creams and in his new chocolate shop.
