«It is not just a cookery book. It is El arte de la cocina francesa, and it is a plea, a declaration, not of culinary intentions but of aspiration, a commitment to a kind of good life, to a vision of the world; an object of devotion involving taste, appetite and a certain je ne sais quoi.
