This is not about trivialising the noble craft of the pastry chef, nor about attacking classic patisserie and petit fours. The great sweet buffets, the elegance and the historical weight of traditional specialities, in short, patisserie of the very best kind, will always have a reserved place in the culinary universe. But that is not incompatible with exploring new paths such as this one of playful, fun patisserie.
The team of teachers from the School of the Barcelona Provincial Pastry Guild, led by its director Olivier Fernández, invites us to play, to set our imagination in motion, to create with an open and easy-going mindset. This small but very intense work, published by Grupo Vilbo and backed by our technical magazines So Good and Dulcypas, is a fine example of the creative, forward-looking mindset of the School's young and highly professional team of teachers.
