A knife does not lose its edge all at once: it dulls little by little, until you notice you have to press to cut a tomato or the bread gets squashed instead of sliced. That is the time to put it through the sharpener, ideally before the edge is badly damaged. Use the coarse stage when the edge is blunt or has small nicks, the fine stage to refine what the first one has done, and the polish stage for the final finish. If you only want to maintain a knife that still cuts well, the last two stages are normally enough. Remember that it is designed for plain edges: a serrated knife, such as a bread knife, cannot be sharpened here.
Clean and dry the knife before sharpening and hold the machine with one hand while you draw the blade through with the other. Move the knife calmly and steadily without forcing it: pressing harder does not sharpen better and only wears the edge away. Start with the stage that matches the condition of the knife and work towards the polish. When you finish, wipe the blade to remove the sharpening dust and test the result on a sheet of paper or a tomato. Store the machine dry and replace the head when you notice it no longer sharpens the way it did at first.
If you want to compare options, electric knife sharpeners lists the other models. The Drei electric knife sharpener by Lacor is the brand's other proposal in this category; if you are torn between the two, open its page and compare the sharpening stages, the angle and the types of knife each one accepts.
Plain-edge stainless steel knives and ceramic knives. It is not suitable for serrated knives, such as a bread knife.
A fixed 20° angle, the same on every pass, so the result does not depend on a steady hand.
Coarse renews a worn edge, fine refines it and polish gives the final finish. It comes with 3 Trizact discs from 3M for this.
18 W at 3000 r.p.m. That is the figure the manufacturer gives for quick, steady sharpening.
