Storage:
The most common mistake in many kitchens is storing knives piled up in drawers, which is very hard on the edge. It is best to use a knife block, a magnetic bar or a knife roll.
Cleaning:
We recommend not washing them in the dishwasher; a very harsh detergent or not drying them properly can cause the metal to lose its shine. It is always best to wash them by hand under running water with ordinary washing-up liquid after use and dry them well once rinsed.
Use:
Each knife has a blade length, width and flexibility designed for a specific task. It is very important to use the right knife for each job. Using a chef's knife for boning can damage the knife or, worse, cause an accident.
Maintenance:
We really want to stress that a blunt knife is more dangerous and less useful than one in perfect condition. If you follow the advice above, a knife of this quality will last a long time without needing sharpening. Regardless of sharpening, though, it is a good idea to use a honing steel often — in this case a ceramic honing steel — as it will keep the edge in perfect condition. When sharpening is needed, use a sharpening stone or an electric sharpener with a medium-grit stone.
