Description
The Ibili paper muffin cases (ref. 729307) are the classic white pleated paper used for Spanish magdalenas and muffins: 50 cases, 7 cm in diameter at the top and 3.5 cm high, suitable for the oven and the microwave. It is the size of a standard magdalena or muffin, the one that fits the cups of a 12-hole muffin tin.
They are used inside the tin: a paper case on its own will not hold the batter, and it is the tin that gives it its shape as it rises. We have sold them since 2015 (81 packs in 44 orders) and the two published reviews, ‘As expected’ and ‘Good (a bit large)’, sum up what they are: the traditional muffin paper, in the standard size. If you bake mini muffins, truffles or chocolates, what you need are the 4.5 cm mini cases.

Place a case in each cup of the tin and fill it two-thirds full: muffin batter rises quite a lot and, if you fill it any further, it spills over the pleated edge. There is no need to grease either the tin or the paper. When they come out of the oven, let them cool for a few minutes before turning them out: the muffin comes away from the paper once it is cold and, if you turn it out hot, part of the crumb stays stuck to the case.
One customer described them as ‘a bit large’: at 7 cm across the top they are the size of a bakery muffin, not a mini. If your tin has slightly smaller cups, such as the Crous perforated 12-hole muffin tin, with a 6.5 cm top, they fit by folding the pleats in a little; for 4.5 cm cups, the minis. What they are not for: they do not go on a baking tray without a tin (they open up and the batter runs out) and they cannot be reused. If you want greaseproof paper that will not show grease marks, or coloured cases, look at the 7.5 cm greaseproof cases.
Paper cases, also called muffin cases, cupcake cases or baking cups; in Spain they are cápsulas de papel. In Ibili’s catalogue this model is the ‘cápsula madalena redonda’, ref. 729307, that is, the round muffin baking cup.
Measure the top of the cup. These 7 cm cases fit the usual 12-hole muffin tins, with cups of 6.5 to 7 cm; for mini muffin tins, with 4.5 cm cups, the mini cases. For larger cups Ibili makes an 8 cm case: ask us.
Yes to both, always inside a tin in the oven. They are paper, so they are not for use in a frying pan or under the grill, and they are not washed: they are single-use.
No. The muffin comes away from the paper by itself once it is cold. With very low-fat batters it may stick a little: this is normal and not a fault of the case.
50, one case per muffin. With a 12-hole muffin tin that is enough for four batches, with two cases to spare.
