Description
The Inoxibar drum sieve is a professional sieve in 18/10 stainless steel with a deep hoop and an interchangeable mesh, available in 3 diameters (20, 30 and 37 cm) and 3 mesh grades (fine, medium and coarse, from 1 to 7 mm), for sifting flour, sugar, ground almonds, breadcrumbs and all kinds of dry ingredients. It comes with a 3-year guarantee and is made by Inoxibar, the Spanish specialist in stainless steel kitchenware.
The drum sieve is the classic bakery sieve: a tall steel hoop with a taut metal mesh, cross-braced, that rests on a bowl or on the worktop. Passing flour through the mesh removes lumps and impurities and leaves the ingredient aerated and loose, which shows in more even bread doughs, lighter sponge cakes and lump-free custards. Unlike a hand sifter, the drum sieve lets you work through large quantities in one go, which is why it is the standard format in bakeries, patisseries and professional kitchens — and the favourite of anyone who takes home baking seriously.
For these sieves you can buy replacement meshes in different grades and swap them into the same hoop: you will find them on our website as Inoxibar sieve meshes. As a guide: the fine grade (1-2 mm) is the one for cake flours, icing sugar and cocoa; the medium (2-5 mm) for bread flours, ground almonds or breadcrumbs; and the coarse (5-7 mm) for sifting semolina, cereals and pulses or removing grit. The larger the diameter of the hoop, the more you can sift per batch.

Hoop and mesh are both 18/10 stainless steel, the benchmark alloy in professional kitchens: it does not rust, does not transfer odours or flavours and stands up to daily use in the bakery. After each use, simply brush the mesh dry or wash it in hot soapy water and dry it thoroughly before putting it away.
A colander is designed for draining liquids; a drum sieve, for sifting and aerating dry ingredients. Its tall hoop and flat, taut mesh let you sift large quantities with a back-and-forth motion, something a bag-shaped strainer cannot manage.
Fine (1-2 mm) for cake flour, icing sugar and cocoa; medium (2-5 mm) for bread flours, almonds or breadcrumbs; coarse (5-7 mm) for semolina, cereals and pulses. If in doubt, the medium grade is the most versatile.
Yes. The mesh is interchangeable and we sell replacement meshes in different grades for the same hoop, so a single sieve covers several uses.
Dry, with a brush, after sifting flour, or with hot soapy water when needed. As it is 18/10 stainless steel it will not rust, but it should be dried thoroughly before being put away.
