In the early 21st century the El Bulli team, of which Albert Raurich was part, made several trips to Japan, sparking a cultural exchange between Asia and Europe: a dialogue with the world's most sensitive and delicate gastronomy that would grow richer over the years.
Dos Palillos is the fruit of that dialogue. To celebrate the restaurant's tenth anniversary, this restless, passionate chef of endless curiosity has brought together more than 170 recipes served at his Asian bar. The former head chef of El Bulli, Albert Raurich, needed a total of 400 pages to distil ten years of intense culinary activity at the helm of the restaurant. As Ferran Adrià himself puts it, this is the most important Asian restaurant outside Asia, something borne out by the more than 170 recipes the book contains.
