Description
The chef's knife from the special Signature series is the ultimate expression of the know-how of 32 Dumas, one of the oldest and most prestigious cutlery houses in Thiers, the French capital of cutlery. With origins dating back to 1532 —hence the "32" in its name— this manufacturer, today part of Rousselon Dumas Sabatier, has spent almost five centuries perfecting the art of kitchen cutlery. The Signature collection brings that legacy together in a 20 cm knife designed for professionals and lovers of good cooking who seek precision, balance and elegance in every cut.
Each Signature knife is forged entirely from a single steel billet that shapes the blade, the bolster (mitre) and the tang. This traditional construction, far more demanding than simple stamping, guarantees a perfectly balanced knife in the hand, strong and durable. The process follows the classic stages of Thiers fine cutlery: drawing out the billet, stamping, trimming the final shape, drilling the tang, grinding and hand-polishing, and a careful final sharpening.
The Signature knife is offered in two handle versions, each with its own character:
| Handle | Material and character |
|---|---|
| Green oak | Oak wood (chêne vert) from responsibly managed European forests. Its blond tone and straight grain give a warm, natural look. |
| Micarta | A technical material made of fine layers of linen compressed with resin and mirror-polished; very strong and with a noble feel. |
Select the handle version above; the reference and price update according to the chosen option.
The 20 cm chef's knife is the most versatile tool in any professional kitchen. Its wide, rigid blade lets you chop, mince, carve and cut all kinds of ingredients with precision: vegetables, herbs, meats and fish. The height of the blade makes rocking cuts on the board easier and protects your knuckles, while the fine tip allows detailed work. It is the go-to knife that no cook's kit should be without.
To preserve the edge and the beauty of the blade and handle, we recommend washing the knife by hand with warm water and drying it immediately, avoiding the dishwasher. Periodic sharpening with a steel or stone will keep its cutting performance for years.
Choosing a Signature knife by 32 Dumas means acquiring a piece with almost 500 years of history behind it, forged in the cradle of French cutlery. Tradition, noble materials and a modern design come together in a tool of excellence, balanced and durable, worthy of the most demanding professionals.
