Sitram is a French cookware manufacturer with more than 50 years of experience, based in Mirande (Gers, France). At Hiperchef we stock its two most sought-after families: the Sitrapro pressure cooker in 18/10 stainless steel, made in France and backed by a 15-year guarantee, and the enamelled cast iron casserole dishes from the Sitrabella, Sitraslow and Tradifonte ranges. All of them work on any heat source, induction included, and the cocottes are oven-safe thanks to their stainless steel knob.

Sitrapro pressure cooker

The 8-litre Sitrapro fast pressure cooker is the brand's benchmark model within our pressure cookers category. It is made from premium European 18/10 stainless steel, with a 1 mm thick body and a 5.5 mm diffuser base that spreads the heat evenly and makes the most of induction hobs. It works at 0.7 bar of pressure, measures 24 cm in diameter and 17.5 cm high, and comes with a silicone steamer basket and a spoon. The lid handle and the pressure regulator are finished in green, which makes it easy to identify the cooking position at a glance. Cooking under pressure cuts cooking times and, with them, energy consumption.

As official distributors for the brand, we also carry the genuine spare parts most often requested: the green weighted valve, the side handle and the folding side handle for the Sitrapro. With these parts, a well-cared-for pressure cooker stays in service throughout its guarantee.

Cast iron casserole dishes

Within pots, pans and casserole dishes we bring together the Sitram cocottes, designed for stews, casseroles and slow cooking over a gentle heat. Cast iron stores the heat and distributes it without hot spots, which is why meat turns out more tender and pulses do not catch on the base:

  • Sitrabella: enamelled cast iron with a cream-coloured interior. Available in 2.5 litres (Ø 20 cm, 9 cm high) in red or black, and in 5 litres (Ø 25 cm, 11.5 cm high) in red, mustard, blue or grey-green.
  • Sitraslow: black 5-litre casserole dish (Ø 25.5 cm, 12 cm high), the most understated option in the range.
  • Tradifonte: round cocotte lacquered in orange with a light beige interior, in 2.5 litres (Ø 20 cm) for 1-2 diners or 5 litres (Ø 26 cm) for 5-6.
  • Classic cocottes in bright red: round in 4 litres (Ø 24 cm) or 5 litres (Ø 26 cm), and oval in 4 litres (27 x 21 cm) or 6.5 litres (33 x 25 cm), the most practical shape for long cuts such as a whole chicken or a rolled beef joint.

How to choose between the Sitram cocottes

Capacity is the first criterion: 2.5 litres serves 1-2 people, 4-5 litres suits a family of 4-6 and 6.5 litres caters for 6-8 diners. The round shape is the most versatile; the oval one lets you cook poultry and whole roasts without jointing them. If you want a casserole dish that looks good at the table, Sitrabella offers more colours; if you prefer a discreet finish, choose Sitraslow in black. In every case the enamelled interior stops the iron from rusting and needs no seasoning before use.

Caring for enamelled cast iron and for the pressure cooker

The cocottes should be washed by hand with hot soapy water, dried thoroughly and stored with the lid slightly ajar. It is best to heat them over a medium-low flame: cast iron retains so much heat that it does not need full power, and this protects the enamel. With the Sitrapro, after every use you should remove the lid gasket, clean the valve and check that the steam outlet is clear. If you have any doubts about the valves and safety systems, we explain them in our guide to pressure cooker safety, and in the guide to choosing a pressure cooker we compare capacities and locking systems.
