Description
Cooking in a wok on an induction hob has a fundamental problem: an authentic wok is round and the hob is flat. This De Buyer pack solves it at the root: it includes a professional stainless steel wok of Ø36 cm and its adapter stand, so you can stir-fry as in traditional Asian cooking even on flat induction hobs.
De Buyer makes this wok in France from thick stainless steel (15/10), a thickness that ensures both strength and manoeuvrability, with a conductivity that spreads the heat across the whole piece. Its 213° profile gives it the rounded shape characteristic of an authentic wok, adapted to special induction hobs for woks, and the stainless steel tube handle is ventilated and ergonomic: it dissipates heat and lets you handle the piece safely while stir-frying.
The included adapter stand is the key to the pack: it stabilises the round wok on the flat induction hob, so you can work with both pieces as a single set. If your hob is a special induction hob for woks (the concave ones), the wok sits directly on it without the need for the stand.
The wok is the healthy-cooking tool par excellence: stir-frying over a fierce heat cooks the ingredients in very little time and with very little oil, keeping the crunch of the vegetables and the juices of meat and fish. A few tips to get the most from it: cut all the ingredients before you start (in the wok there are no pauses), heat the wok well before adding the oil, and stir-fry in small batches, stirring constantly — if you overfill the wok, the ingredients steam instead of stir-frying. The classic order: aromatics first (garlic, ginger), then the proteins, then the vegetables from firmest to most tender, and the sauce at the end.
Unlike traditional carbon steel woks, stainless steel needs no prior seasoning or special maintenance: it does not rust even if you wash it often, it does not need drying and oiling after each use, and it keeps its appearance over the years. It is the most practical option for anyone who wants to cook in a wok without maintenance rituals.
Being uncoated stainless steel, this wok withstands heavy use without worry: metal utensils, a strong heat and years of service. After cooking, let it cool before washing; if anything sticks, soak it in hot soapy water. The iridescent marks that appear with a strong heat are normal on stainless steel and can be removed with a splash of vinegar.
For any kitchen — domestic or professional — that runs on induction and wants authentic wok results: stir-fries, special fried rice, noodles, crunchy vegetables or Asian-style meat. It is the complete solution: you do not need to buy the adapter separately or give up the traditional round-bottomed wok.
