Emile Henry: kitchen ceramics made in France since 1850
Emile Henry is a French kitchen ceramics maker that has produced every piece in Burgundy (France) since 1850 and backs them all with a 10-year guarantee. At Hiperchef you will find its collection of oven dishes and baking trays, cocottes and ceramic casseroles, tarte tatin dishes, a pizza stone, and kitchen and tableware accessories such as pestles and mortars, butter dishes, oil cruets and salt pigs.
Two ceramics, two uses: HR® and Flame®
Emile Henry works with two materials of its own. HR® ceramic (high resistance) is designed for the oven: it diffuses heat evenly throughout cooking, withstands going straight from the freezer to the oven, and is microwave and dishwasher safe. Flame® ceramic goes a step further and can be used directly on the hob (gas and ceramic hobs) as well as in the oven; on induction hobs these pieces require a heat diffuser adapter. In both cases it is ceramic free from lead, cadmium and nickel, which locks in the juices and natural flavour of the ingredients and keeps food hot at the table throughout the meal.
What you will find from Emile Henry at Hiperchef
For the oven: rectangular HR® ceramic dishes in 22x14, 28x23, 29x19 and 36x23 cm sizes – such as the 29x19 cm oven dish –, an oval high-sided dish for gratins, a 41x24 cm papillote dish with lid for enclosed cooking, and the smooth refractory ceramic pizza stone, with two wide handles for carrying it from the oven to the table. For stews: the round Flame® ceramic cocotte, the shallow casserole with lid measuring Ø29.5 cm and holding 3.2 litres, and the 28 cm tarte tatin dish in which the tart is baked, presented and served in the same vessel. And for preparing and serving: the ceramic pestle and mortar with beech pestle, the 17 cm butter dish that shields butter from air and light, the oil cruet with anti-drip spout, and the La Main à Sel salt pig, with an unglazed interior that keeps salt dry and free-flowing.
Frequently asked questions about Emile Henry
Where does Emile Henry make its products?
Emile Henry makes 100% of its pieces in Burgundy (France), where it has been producing ceramics since 1850. All its products come with a 10-year guarantee.
What is the difference between HR® ceramic and Flame® ceramic?
HR® ceramic (high resistance) is for the oven, microwave and freezer, with even heat diffusion. Flame® ceramic can also be used over direct heat: gas and ceramic hobs, and induction with a heat diffuser adapter.
Can an Emile Henry dish go from the freezer to the oven?
Yes. HR® ceramic pieces go straight from the freezer to the oven, withstand the grill at high temperatures and can be heated or defrosted in the microwave. They are also dishwasher safe.
Is Emile Henry ceramic safe for cooking?
Yes. Emile Henry uses ceramic free from lead, cadmium and nickel, which does not stain or hold on to odours, preserves the nutritional qualities of food and allows gentle, even cooking.
