The induction paella pan by Garcima is a Valencian paella pan in polished steel with a flat base, designed for cooking rice on induction hobs, ceramic hobs and electric cookers, although it also works over gas or a wood fire. It is made in Valencia (Spain) from the thickest steel on the market, which makes it more resistant to warping and helps it spread and hold the heat better. It comes with a 2-year guarantee.

With induction, what matters is the diameter of the base, not the rim: for the hob to detect the pan properly and heat the whole surface, choose a size whose base is close to that of your cooking zone. If your hob has a large or flexible zone, you can go up to 38 or 42 cm; for a standard zone, the 30 and 34 cm sizes are the best balanced. If you are torn between two, check the servings column in the table.
Polished steel has no coating at all, so it needs protecting from moisture. After each use, wash the pan, dry it thoroughly and rub it with a thin layer of oil; store it wrapped in paper or inside a bag. With this simple care it stays in perfect condition for years and develops a better cooking surface with use.

The polished pan is the traditional Valencian steel: it needs drying and rubbing with oil after each use to prevent rust. The enamelled pan has a vitrified coating that does away with that maintenance, in exchange for a less traditional finish.
Dry it thoroughly after washing, apply a thin layer of oil over the whole surface and store it wrapped in paper or in a bag, in a dry place.
As a guide: 30 cm for 1 serving, 34 cm for 2, 38 cm for 3 and 42 cm for 5. On induction, remember to also check the base diameter against your hob.
