This plastic tomato press for home use is designed to mill tomatoes efficiently, separating the pulp cleanly from the skin and seeds so you get a clean juice ready to cook. Fix it to the table or worktop with the suction pad and press the small lever so it is held firmly while you work. Wash the tomatoes, chop them and feed them into the hopper using the pusher included. As you turn the handle, the mechanism presses the pulp through the stainless steel filter: the sauce falls cleanly into the container while the skin and seeds come out separately. There is no need to peel or deseed beforehand, which saves a lot of time when processing large quantities.
With the clean tomato juice you get, you can make far more than pasta sauce: sofritos and stew bases, smooth gazpacho and salmorejo, homemade fried tomato, tomato jam or the base for a pisto. As it leaves out the skin and seeds, the sauce is smoother and reduces faster on the hob, concentrating the flavour without bitterness. It is a handy way to process a glut from the garden or market all at once when tomatoes are in full season.
To keep the results for months, fill clean glass jars with the sauce, close them and sterilise them in a bain-marie for a few minutes; as they cool, the lid seals under vacuum. You can also divide the juice into containers or bags and freeze it in portions. That way you'll have 100% natural homemade tomato ready to use all year round, with no added preservatives.
