EcoFresh Biodegradable Vacuum Roll by Lacor: cut the bag to the size of each piece

The EcoFresh biodegradable vacuum roll by Lacor is an embossed 75-micron roll, made from plant-based materials and suitable for contact with food. It is sold by the roll, in two widths, 22 cm and 28 cm, both 5 m long. You cut the bag to the exact size of each piece and seal it with your vacuum sealer, so you use no more material than you need.

Which width should I choose?

The 22 cm roll is the most practical for everyday use: steaks, chicken breasts, slices of cheese or cold cuts, chopped vegetables and single portions. The 28 cm roll suits wider or bulkier pieces, such as a loin of pork, a large fish or a cooked dish for several people. If you cook sous vide often, the 28 cm width gives you more room to spread the food in a single layer.

Use and care tips

Cut the length of the piece and add a few extra centimetres for sealing. Seal one end first with your machine, put the food in, wipe grease and moisture from the open edge and pull the vacuum. With very liquid foods, such as sauces or stocks, freeze them first in a container so the machine does not draw up the liquid. Respect the limits on the data sheet: 600 W at most in the microwave and 90 °C for sous vide. Store the roll somewhere dry and cool, away from heat sources.
