Hello, I've seen a video showing how your TITAN machine creates a vacuum in jars, but there's a comment that left me with a doubt — it says that what you vacuum-seal can be kept at room temperature when the items are dry, and if it contains moisture it must be kept in the fridge. For me, the purpose I'd use it for would be sauces and other vegetables that we prepare and pack and then keep at room temperature without any problem for up to two years using the bain-marie method. However, your method seems much more practical, quick and, in the long run, saves time and money, but if I have to put it in the fridge then there's no saving. Could you please clarify for me whether the moist items sealed with your machine really do have to be kept in the fridge.

Hello Rocco. Not necessarily. But what's important for you to understand is that the bain-marie pasteurises the product, whereas simply vacuum-sealing does not. Kind regards.
