At Hiperchef we are the official distributor of Marcato, the Italian brand of machines for making fresh pasta at home. A family business from Padua (Veneto, Italy) that since 1930 has made manual and motorised machines to knead, roll and cut pasta, as well as a wide range of accessories, ravioli moulds, graters, dusters and creative kits. The whole Marcato range is designed for demanding home use and small Italian catering businesses.
Marcato: a history of fresh pasta since 1930
Marcato was founded in 1930 in the town of Campodarsego, near Padua. What began as a small mechanical workshop making pasta machines for Italian households became, with three generations of the Marcato family at the helm, the world's benchmark brand for making fresh homemade pasta. Its machines are still made entirely in Italy, with finishes in chromed steel, anodised aluminium or colourful epoxy paint.
The Atlas 150, launched in 1965, is probably the best-selling manual pasta machine in the world. Its sturdy design, mechanical simplicity and the option of adding accessories to cut all kinds of pasta (tagliolini, taglierini, fettuccine, pappardelle, lasagnette, capelli d'angelo, ravioli, trenette, reginette) have made it an essential in professional kitchens and among lovers of Italian cooking.
Marcato ranges available at Hiperchef
Manual machines for fresh pasta
The heart of the brand. The Atlas 150 and its bigger sister the Atlas 180 roll dough up to 15 cm or 18 cm wide respectively, with thickness adjustment across 10 settings. Available in the classic chromed version, in pastel colours (red, blue, green, pink, yellow, silver, gold…) and in the vintage Otello 150 line with retro styling. The Roller 150 Premium is the professional version with wider rollers and a reinforced chassis.
Motorised machines and Pasta Drive motors
For those who want the convenience of a motor without losing the mechanical quality of the roller, Marcato offers the Pasta Drive accessory, a motor that attaches to any manual Atlas 150 and turns it electric. The Atlasmotor PLUS 150 is the factory-integrated version, ready to plug in.
Special machines: Regina, Biscuits and Marga
The Regina makes rigatoni macaroni by extrusion, hand-operated with a crank. The Biscuits is a biscuit press with 20 discs in different shapes. The Marga is a cereal and grain mill for making fresh flour at home.
Ravioli moulds and creative kits
A wide collection of ravioli moulds: plain round 38 mm and 50 mm, flower-shaped round, zig-zag round (38, 50 and 65 mm), zig-zag square 45 and 60 mm, oval, star-shaped… As well as the Raviolè, Tortellini Like a Pro, Cakes Like a Pro and Cookies Like a Pro kits with specialised moulds and tools.
Accessories and tools
The Ravioli Tablet is an aluminium tray for making 12 ravioli at once with dough rolled over the top. The Tacapasta is a folding rack for drying freshly cut pasta. The Pasta Wheel and the PastaBike are hand-held cutting wheels for shaping wavy or scalloped edges. The dispensing duster spreads semolina over the dough so it doesn't stick while you work it. And the crank and clamp sets are original spare parts.
Made in Italy and repairable
All Marcato machines are made in Italy with materials that comply with the MOCA regulations (Materiali e Oggetti a Contatto con Alimenti – materials and articles in contact with food). The chromed rollers and steel gears allow decades of home use with no noticeable wear. Marcato offers technical support and spare parts for machines that are 20-30 years old. At Hiperchef you can buy individual accessories (cranks, clamps, cutting attachments) when the originals wear out.
Cutting attachments compatible with the Atlas 150
The modular Atlas 150 system lets you attach cutting accessories to produce different pasta shapes. The most common are the cutters for tagliolini (1.5 mm), capelli d'angelo, taglierini (3 mm), fettuccine (6.5 mm), trenette (3.5 mm), lasagnette (12 mm), pappardelle (12 mm), reginette (12 mm scalloped) and many more. All the accessories swap over without tools and are compatible with the Atlas 150 chromed, Atlas 150 colours, Atlasmotor 150 and Otello 150 models.
Guarantee and after-sales service
Marcato gives a 10-year guarantee on mechanical components (rollers, gears, cranks) under domestic use. Electrical accessories such as the Pasta Drive and the Atlasmotor carry a 2-year guarantee. As the official distributor, at Hiperchef we handle any guarantee claim directly with the manufacturer in Italy.
Frequently asked questions about Marcato
Where are Marcato machines made?
All Marcato machines are made entirely in Italy, at the company's headquarters in Campodarsego (Padua, Veneto), where the brand was born in 1930. Marcato does not outsource production to other countries.
What guarantee do Marcato machines have?
The manual machines (Atlas 150, Atlas 180, Roller 150, Regina, Biscuits, Marga) carry a 10-year guarantee on mechanical components under domestic use. The electrical accessories (Pasta Drive, Atlasmotor) have a 2-year guarantee. Hiperchef handles the guarantee directly with the manufacturer.
Can Marcato machines be washed in the dishwasher?
No. The rollers and cutting attachments of Marcato machines must not be wetted or put in the dishwasher. The correct way to clean them is to remove the dough residue with the brush or a cocktail stick, leave them to air-dry and, if necessary, wipe with a slightly damp cloth (never soaking wet). Water rusts the rollers and damages the gears.
What is the difference between the Atlas 150 and the Atlas 180?
The main difference is the width of the dough sheet: the Atlas 150 rolls up to 15 cm wide while the Atlas 180 reaches 18 cm. Mechanically they are identical and share thickness adjustment across 10 settings. The 180 is preferable for making large sheets of lasagne, cannelloni or bulk ravioli; the 150 is the standard choice for the home.
Can you add a motor to the Atlas 150 after buying it?
Yes. Marcato makes the Pasta Drive accessory, an electric motor that fits onto the side of any manual Atlas 150, replacing the crank. It turns the machine into a motorised one without losing any of its features. It can be bought separately and fitted in under 2 minutes without tools.
Which cutting attachments are the most useful to start with?
For someone just starting out, the two most useful accessories are the fettuccine cutter (6.5 mm, ideal for full-bodied sauces) and the tagliolini cutter (1.5 mm, for soups and broths). With those two shapes you cover 80% of Italian fresh pasta recipes. After that, people usually add reginette or pappardelle for more special dishes.
Does Marcato sell spare parts for old machines?
Yes. Marcato keeps a catalogue of spare parts for Atlas 150 machines made decades ago. At Hiperchef you can buy individual cranks, clamps and cutting attachments. If you need a specific spare part that isn't listed, contact us at altas@hiperchef.com.
Is Marcato suitable for making gluten-free pasta?
Yes. Marcato machines roll and cut any dough, including gluten-free pasta made with alternative flours (rice, maize, buckwheat). It's worth keeping one machine solely for gluten-free flours if there are coeliacs in the household, since it can't be cleaned with water and gluten residue could cause cross-contamination.
