Earthenware dishes are the most natural way to prepare any food that needs to go in the oven. Earthenware heats up gradually and distributes heat evenly, with no hot spots, and once out of the oven it keeps food warm far longer than any other type of dish: you can take it straight to the table and serve hot right down to the last portion.

Ideal for oven-baked rice and all kinds of roasts

It is the dish for the classic Valencian oven-baked rice ("arròs al forn") and other dry rice dishes finished in the oven: its shallow, wide shape spreads the rice in a thin layer, exactly what it needs to stay loose with a golden top. It is also essential for all kinds of roasts —meat, salt-baked fish, vegetables, roast potatoes or gratins— because it keeps food juicy and doubles as a serving dish.

Which size to choose

These dishes are handmade, so the measurements can vary by 1 or 2 cm from one piece to another. Bear in mind that the 40 cm dish does not fit in conventional ovens: it is a size intended for large or catering ovens.

First use and care of earthenware

Before using it for the first time, it is advisable to keep the dish submerged in water for at least 12 hours: the earthenware absorbs the water and is cured ready for the oven. After that, care is simple: avoid sudden changes in temperature (do not move it from a hot oven into cold water) and let it cool before washing. It is microwave and dishwasher safe.

One important note: unlike deep dishes, shallow dishes are for the oven only. If you are looking for an earthenware piece for cooking over direct heat, choose the deep earthenware dish.
